Ingredients
500g (1 lb) fresh button mushrooms, cleaned and thoroughly dried
3–4 cloves garlic, finely minced
1 cup all-purpose flour
½ cup cornstarch (for that extra crispiness)
½ tsp baking powder
1 tsp smoked paprika
1 tsp onion powder
½ tsp black pepper
1 tsp sea salt
¾ cup ice-cold sparkling water (the secret to a light, airy batter)
1 tbsp fresh parsley, chopped (for a touch of freshness)
High-quality vegetable oil, for frying
For Serving:
Your favorite premium dips, such as garlic aioli, spicy mayo, or a bright lemon-tahini sauce.
Instructions
Prep the Mushrooms & Oil: Ensure your mushrooms are completely dry, as this helps the batter stick and makes them crispier. In a large, heavy-bottomed pot or deep fryer, pour in enough oil to reach a depth of about 2 inches. Heat the oil over medium-high heat to 180°C (350°F).
Mix the Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, cornstarch, baking powder, smoked paprika, onion powder, salt, and pepper until well combined.
Create the Batter: Pour the ice-cold sparkling water into the dry ingredients and add the minced garlic. Whisk gently until just combined—a few small lumps are perfectly fine. Do not overmix.
Batter the Mushrooms: Working in small batches, add a handful of mushrooms to the batter and toss gently to coat them completely.
Fry to Golden Perfection: Carefully lift the battered mushrooms one by one, allowing any excess batter to drip off, and place them into the hot oil. Be sure not to overcrowd the pot. Fry for 3-5 minutes, turning occasionally, until they are a deep golden brown and wonderfully crispy.
Drain and Garnish: Use a slotted spoon to transfer the fried mushrooms to a wire rack to drain any excess oil. Immediately sprinkle with a little extra salt and the fresh parsley.
Serve Hot: Serve immediately with your choice of delicious dips for the ultimate crunchy, savory experience.
